In the nineteenth century a regular passenger on Henry Hill’s coach was the parson as he made his way around the district visiting his flock. Parson’s Flat honours this early ecclesiastical work and reflects Kim’s fondness for the classic Australian blend of Shiraz and Cabernet.

2007 Parson's Flat Shiraz/ Cabernet 91 Points
A blend of 57% Shiraz and 43% Cabernet Sauvignon, the 2007 Parson’s Flat was aged for 15 to 16 months in 60% American oak and 40% French, 40% of which was new. Very deep garnet colored, it has intense black cherry, black-berry and minted cassis aromas with nuances of tobacco, tree bark, earth and some licorice. Full-bodied with medium-firm silky tannins and high acid struc-turing the generous fruit, it has very good persistence. Just beginning to evolve and enter its drinking window, it should continue to cellar to 2016.

2006 Parsons Flat Shiraz Cabernet
While its reserve shiraz is a gem, this delicious blend is the ace in a very impressive portfolio of wines from Henry's Drive Vignerons. Indeed, the shiraz that drives Parsons Flat (65 per cent of the blend) shows striking cool climate characteristics which make this take on Australia's great red blend so beguiling. Its dense red colour with a purple hue and rich nose of wild berries, savoury spices and mint suggests a huge wine, though the flavours are a more luscious, harmonious meld of concentrated blackberry and milk chocolate. It's held firm but never overwhelmed by a mixture of old and new French and American oak, velvety tannins provide a supple finish between sweet and spicy notes, making smooth, scrumptious drinking.
